Insanity and Brussel Sprouts






Have you ever been perfectly content with your body until an upcoming large event makes you feel otherwise? Yeah….So, Morgan and I have been trying to get in shape for my sister’s wedding and a few vacations coming up this year. Technically, I voiced my opinion that I wanted to get in shape by starting the Insanity DVDs. Then, my husband (who already works out 5 times a week) said he felt his workouts were sometimes not enough and wanted to try something different. It has been a crazy, painful and long few weeks, but I am happy to say that we are 28 days in and already feeling the results.

Along with working out, we are trying to eat more at home and have come across an assortment of healthy and delicious recipes from the web. Here is one from Costa Kitchen  that is great as a side or snack. Anna Costa always has the most delicious, healthy and relatively easy to make recipes on her site; her blog is a must follow. I did tweak the recipe to use ingredients I had on hand and it came out amazing! Instead of using mayo, I used 3 tbs. Miracle Whip with 3 tbs. heavy cream to smooth out the texture and mellow out the flavor. I omitted the parsley because I was out.  I hope you enjoy this recipe as much as I did. Crispy Brussel Sprouts with a Garlic Aioli 
For Brussel Sprouts:
20 Brussel Sprouts cut into wedges
Canola Oil
Salt & Pepper
For Aioli:
6 tbs mayonnaise
1/4 tsp garlic minced fine
1 tsp lemon juice
1 tbs flat leaf parsley chopped fine
For Brussel Sprouts:
Place brussel sprouts on a baking sheet and drizzle with canola oil. Crack some fresh salt & pepper to taste. Mix around brussel sprouts on pan to ensure they all get nicely coated in the oil. Bake at 400 degrees for 15 minutes or until golden brown on at least one side.
For Aioli:
Mix together mayonnaise, garlic, parsley and lemon juice. Serve in a ramekin.
Place ramekin of aioli on a plate and surround with brussel sprouts. If serving as an appetizer, put some toothpicks on the side for your guests. Enjoy!
