The infamous Pink Diablo...

I ate this whole thing all by myself.


The weather has been so wonderful lately here in Phoenix, that Morgan and I decided to stroll over to Urban Beans/Tertio Wine Bar for lunch on Sunday. If you clicked on the links and are trying to figure out why one restaurant has two names and two sites, here is the lowdown. The cute Central Phoenix spot started as Urban Beans, a simple coffee spot that also served delicious baked goods and simple fare. Later, the place installed a small bar area and received a liquor license. During happy hour and later the place is usually referred to as Tertio, serving tasty noshes more appropriate for late night munching while sipping wine or a cocktail.

My personal favorite is the Pink Diablo cocktail. It is a a dangerous blend of tequila, muddles mint, lime, prickly pear juice and agave habanero syrup poured over ice in a colorful, sugar rimmed glass. Yowza! It's smooth, sweet and has a bit of a kick....very Arizona! This combination of flavors can also be found in the Pink Diablo Pie. A pie so unusual and scrumptious, my mouth is watering over my keyboard as I type. I, of course, ordered a Pink Diablo to accompany my Pear and Arugula Melt, which is actually a flat bread topped with arugula, pear, and fontina cheese, with a generous drizzle of balsamic. Morgan's lasagna was leftovers served deli style from the Tertio dinner menu the evening before. It was warmed and served alongside crusty artisan bread. A delightful way to start a Sunday.
